Cloud bread is a delicious recipe that originates from the United States of America.
It is made with just two simple ingredients: cream cheese and eggs. The name may be bizarre, but the texture gives it all away: soft and cloudy.
It can serve as an excellent low-carb or low-calorie alternative to regular bread. Cloud bread is a tasty indulgence that can be enjoyed for breakfast or as a quick snack. It pairs well with lean cold cuts, smoked salmon, and seasonal vegetables. You can add various spices to enhance its flavours, such as chives and pepper, or give it an oriental twist with curry, adding a beautiful orange colour.

Ingredients
- 2 large eggs
- 40 gr of spreadable cheese
- ½ teaspoon of cream of tartar
- Salt to taste
- To taste black pepper
- To taste sesame seeds
Preparation
1 – The ingredients for cloud bread should be put together very quickly since it is mainly made of whipped egg white, and they tend to go flat very quickly. Heat your static oven at about 170°C, then separate the yolks from the whites. Add salt, pepper, cream of tartar and soft cheese in the bowl with the egg yolks. Whisk all the ingredients until you get a smooth and soft cream.
2 – Clean the whisks and whip the egg whites to stiff pick. Using a spatula, incorporate the egg yolks and cheese mixture into the egg whites, working slowly from the bottom to keep the “cloudy” consistency.
3 – Line a baking tray with parchment paper, then gently spoon the mixture. Sprinkle some sesame seeds and bake the cloud buns in the oven for about 20 minutes at 170°C. Once ready, turn off the heat and let them cool in the oven. Serve your freshly made cloud bread with smoked salmon and rocket salad.
Tips
- If the sandwiches become too dark during cooking, lower the oven to 150 degrees and continue cooking.
- If you are afraid that they will stick to the bottom, lightly grease the baking paper.
