Ingredients
For 4 people, prep time 5 minutes, cooking time 12-18 minutes
- 1 large cauliflower
- 3 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 ½ tsp sumac
- 1 tsp chilli flakes
- 1 tbsp pumpkin seeds
- 3 tbsp extra virgin olive oil
- 2 garlic cloves
- 2 tbsp tomato puree
- 1 lemon, juice and zest
- Parsley to garnish
Method
1 – In a small bowl, add tomato pure, oil and lemon juice and mix it well to create a soft paste.
2 – In the oven-safe tray, add together cayenne pepper, sumac, chilli flakes, salt, pepper, and chopped garlic and mix well.
3 – Add cauliflower florets and mix with the spices, then pour the soft paste made with oil, tomato and lemon juice.
4 – When the cauliflower and spices are all well mixed, bake it in the oven at 200°C for 25-30 minutes, then remove it from the oven, sprinkle over the pumpkin seeds and return it to the oven for further 10 minutes until the Bang Bang Cauliflower is baked to perfection. Serve it hot with a nice tomato dipping.
Tips
- Cut the florets consistently so they are all similar sizes to cook evenly.
- Bang Bang Cauliflower is a notoriously spicy hot dish. However, you can omit the cayenne pepper and chilli flakes if you prefer a mild flavour.
